I would like to be able to configure debian-installer to log messages to a
remote syslog server. I know that I can recover the log messages after
installation is complete but it would be convenient for me to be able to
monitor netbooted clients as they are installed.

Hmmm, how about what happens before the network is configured?
I'm indeed not even sure about the right package to reassign this
to....but I really doubt anyone works on this unless you dig into D-I
and try yourself..:-)

This is an interesting consideration, but as Christian pointed out, this
would probably need to be a new d-i inclusion by someone interested
enough to hack on and maintain such a feature. However, since I've done
a few preseeded remote installs[0], I think you might be able to work
with the existing network-console[1] and perhaps include your own syslog
configuration and service restart via a preseed early_command script.
Just a couple thoughts.

This is how I do it at the moment:
d-i preseed/early_command string /usr/bin/killall syslogd &&
/sbin/syslogd -m 0 -O /var/log/syslog -S -R hostname.tld
But of course I'd also welcome a more standardized way doing it - my
preseed/early_command line is starting to get overcrowded, those are
only two out of 15 commands in my real preseed.cfg.

busybox syslogd does pretty much the right thing here - it tries to
resolve the remote syslog target every so often, and you just don't get
any logging until that works. I think that's OK for a remote logging
setup. We did this in Ubuntu a while ago and my understanding is that
Google is using it in their internal "Goobuntu" derivative:

Turning on CONFIG_FEATURE_REMOTE_LOG makes (spookily) zero difference to
the size of /bin/busybox, and increases busybox-udeb's size by 224
bytes. This is within my "just do it" threshold, so I'll go ahead.

Oh, and just to clarify: I'll be using both the -L and -R options in
this case, so what will happen is that you'll get local log entries
until such time as the network is configured and both local and remote
log entries after that.

as well so you can use it to monitor a virtual machine and so on.
