This is very probably a dialog problem.  The pages are off white, the
highlighted letters on the page (for keyboard selection) are red, the rest
of the word is yellow.  yellow on off-white = unreadable:

   |  Beta      |
   -------------+
   
 In the above I would see "A" "B", but not the actual words.
 
I can't remembering altering the colours so I believe this is the default
setting.

Do you have whiptail installed? This is probably a whiptail bug.

Hello.

This is a bug reported initially against debconf, but was reassigned to
dialog. Here it is an example not involving debconf, provided
by the debconf maintainer, Joey Hess:

dialog --menu foo 20 30 15 foo foo bar bar baz baz

This has to be run in an Eterm.

Joey adds: "Yellow and white have *horrid* contrast, dialog should not use
them together."
