I think it would be nice to be able to view the tag/branch/merge
structure without all the individual commits that are not a branch,
merge or tag operation.

Yes, it is nice indeed.  With current git, you can do this with gitk
--simplify-by-decoration or by checking “simple history” in the
“Edit view...” dialog.

See v1.6.1-rc1~61^2~3 (revision traversal: '--simplify-by-decoration',
2008-11-03) and v1.6.5-rc2~9^2~9 (gitk: Add option 'simplify history'
to the options menu, 2009-05-21) for details.
