this was intentional, as ltsp doesn't really have testing network boot
support for most architectures, and many architectures don't really seem
to likely to be useful as thin-clients.

i'm having trouble finding documentation for the process to reduce the
number of architectures for a set of packages.

changing "Architecture: any" to "Architecture: foo bar baz" clearly
seems to stop the package from sucessfully building, but doesn't stop a
buildd from attempting to build the package.

from what i've gathered, i'll need to contact ftp-master and/or
debian-release about getting the packages removed from unstable and
testing?

You need to submit a BTS issue against the ftp.debian.org
pseudopackage, asking for the removal of the binary packages for the
packages no longer supported by the ltsp package.

People do _sell_ arm/mips based thin clients, so "amd64 i386 powerpc"
seems overly restrictive.

i would gladly add back support for any architectures that have people
who are committed to keeping it working with ltsp, and be happy to
assist them in doing so.

at the moment, support for arm* and mips* is untested.
