I'm using this preseed file, and if I put *, \*, "*" in a password field, I'm 
getting these:

root:bin dev etc floppy init initrd lib mnt proc root sbin sys tmp usr 
var:13824:0:99999:7:::
root:\*:13824:0:99999:7:::
root:"*":13824:0:99999:7:::

What do I need to put to just get a line like this:
root:*:13824:0:99999:7:::

Joey Hess fixed a parsing bug this morning, which seems to be the
cause for your problem.

I roughly tried that, as long as debconf really has "*" for
root-password-crypted, one ends with what you want in /etc/shadow
