I see the following in your debian/tests/control:

It starts working when you use libreoffice-writer. (So explicitely no -nogui but given parlatype is an extension with UI
this could also be acceptable)

After some tests in a fresh chroot it seems that the test somehow tries to access libcuilo.so in some way.
(Found out by copying it from -core over.).  [1]

So either
 - Depends: libreoffice-writer
or
 - Depends: libreoffice-writer-nogui, libreoffice-core

sound like possible solutions here.

Same for Build-Depends in debian/control.

[1] apparently they made some stuff checking some configuration stuff/options stuff and still do so via "Common UI" (cui) even in --disable-gui. :/

I just saw that you uploaded parlatype fixing its RC bug [1]

Can you fix this bug, too? I just uploaded the last LibreOffice of 7.5.x 
series ever to unstable. I think we should move to LibreOffice 7.6 asap, 
especially since 24.2 is around the corner too and we need experimental 
to test that one...

to https://salsa.debian.org/gkarsay/parlatype-libreoffice-extension

I haven't uploaded it yet, I don't know if I should target experimental 
or unstable? I also don't understand why the build i386 pipeline failed 
complaining about unmet dependencies.

unstable, please. It should work with sids libreoffice too. This makes 
the way of uploading it open instead of needing to nudge you again to 
upload experimental->unstable

Neither me, but maybe it fell into some temporary issue (e.gf. caused by 
the 7.5.8-1 upload)?
